email this article The Chef has been recently criticising his celebrity chef colleagues in Spain for using such chemicals.The Spanish Chef, Santi Santamaría, who has recently upset his celebrity chef colleagues in the country by criticising the strange chemicals and additives they use, and for calling for a return to the idea of nutrition has now admitted to the ‘El Periódico’ newspaper that he also uses chemical additives.
It came after the paper found one of his recipes contains glycerine. Now Santamaría says that he uses few additives and he is using less and less.
It was at the recent presentation of his new book ‘La Ccina al desnudo’ when he started his attack on the so-called new cuisine as led in Spain by chefs such as Ferran Adrià, who he said prepared expensive dishes for their clients who had no idea what they were eating.
At the time he said he would never use stabilising or other chemicals in his kitchen, and his comments even gained some support from the food safety agency in Spain who thought the idea from Santamaría that chefs in restaurants tell their clients exactly all their ingredients was a good one.
